Japanese Oishii Cooking Class for Adults Online (Saturdays, 11am-12pm)

Class dates: 1/20, 2/3, and 2/17 Saturday lunches from 11:00-12:00 PM Central Time.
Class 1: More vegetables for a healthy lunch
Class 2: Sake + Soy + Rice = Good Match
Class 3: Creative bento box for fun
Pre-requisite: This online class is for anyone ages 16 and above interested in Japanese language and culture. No previous study of Japanese language is needed. Ingredients are not provided by the TLC. Students will need to purchase the ingredients in advance for each of the classes. Full menus are listed below.

If more than one student is attending in the same household, everyone must register for the class.

If you have any questions about any ingredients in the menu, contact the instructor, Noriko Harasawa. You will be able to message her once you register through Matrix, our online Learning Management system at the Tennessee Language Center.


·         Enjoy simple, healthy and tasty dishes with basic Japanese cooking

·         Learn basic Japanese ingredients and how to use them.

·         Other ideas with the ingredients for American food as well

·         Learn basic vocabulary and expressions in Japanese

Can-Do Statements: Upon successful completion of this course, learners will be able to:

·         Learn why Japanese food is healthy

·         Know fermented food effects

·         Learn5methods of Japanese cooking

·         Import healthy eating styles from little kids to adults=More vegetables, good looking presentation    

·         Learn how to use basic ingredients (miso, soy sauce, rice vinegar, dashi, sake, wasabi)

·         Get tips for other recipe ideas with leftover seasonings 


·         Using a laptop and camera on while the kitchen.

·         Preparation and measuring of all ingredients, including cooked rice when necessary, BEFORE the start of class

·         Kitchen tools for the recipes

Menus and Required Ingredients:

Class 1: Jan 20 (11:00-12:00PM Central Time)
More vegetable for healthy lunch

Onigiri/rice ball
Healthy quick miso soup

2 small bowls or cups for making rice ball shapes,2 miso soup bowls 

Ingredients for two servings:

To prepare before class
2 cups cooked white Japanese rice

- 1 avocado

- ½ lemon

- 1 tablespoon salt

- 1 cucumber

- 3 tablespoons mayonnaise  

- 1 package smoked salmon

- 1 package regular tuna

- 2 green onions

- Inari package can

- 2 tablespoons miso

- ½ cup hot water

- 1 dashi package


Class 2: February 3 (11:00-12:00PM Central Time)
Sake + Soy Sauce + Rice = Good Match
Vegetable Pickles
Dashi soup

2 bowls or plates for rice, 2 soup bowls, 2 salad plates, frying pan for steak

Ingredients for two servings:

To prepare before class
- 2 cups cooked white Japanese rice,
- pickles made with 1 bunch red radish with soy sauce
- pickles of 1 piece sliced celery with dashi

- 2 thin steaks (for cooking with a frying pan)
- Salt and pepper
- 1 teaspoon butter
- 2 tablespoons sake
- 2 tablespoons soy sauce
-1 dashi package

-1 small soft tofu for soup


Class 3: February 17 (11:00-12:00PM Central Time)
Create your own character bento box

2 containers for Bento Box

Ingredients for one serving:

To prepare before class
1 cup cooked white Japanese rice and decide what character you want to make

- Example

- Butter rice or saffron rice

- Mini tomato

- Broccoli

- Cocktail sausage

- Thin honey ham

- Surimi fish meat

- Seaweed nori

- Lettuce

- Egg

- etc.
